What enzymes actually do
Food does not absorb as food. Protein has to be cleaved into amino acids, starch into glucose, fat into fatty acids and glycerol — because only small molecules cross the intestinal wall. Enzymes perform that cutting.
Your body makes its own from the pancreas, stomach and intestinal lining, and under normal circumstances that supply is sufficient.

Two of those are worth singling out. Humans produce no cellulase whatsoever, so plant fibre is broken down only by gut bacteria — which is where much of the gas comes from.
